Dinner Tasting Menu

Lanna cuisine is a branch of Northern Thai cuisine, flourishing in the heart of Thailand’s mountainous north. Influenced by neighboring Myanmar and Laos, Lanna flavors are a bold interplay of spice, sour, and savory. Unlike the coconut-heavy curries found in central Thailand, Lanna cuisine features dishes like the rich hang lay curry, often made with fermented soybeans and featuring a more profound, earthier flavor profile. Northern Thai cuisine also embraces unique ingredients like sausage made with local herbs and fiery chilies, smoked meats, and freshwater fish, setting it apart from other regional Thai cuisines.

Highlighting all these fantastic ingredients is North, a Michelin guide-recommended restaurant in Bangkok offering seasonal tasting menus. Our philosophy? To showcase and elevate these exquisite Lanna flavors and put them on the global culinary map.

Our menu isn’t a static list; it’s a dynamic exploration that changes with the seasons. Chef Nu-Panupong Songsang’s Thai tasting menu is a carefully crafted narrative. Each dish highlights the freshest seasonal ingredients sourced directly from the north’s bounty.

Each ingredient on our fine-dining tasting menu has its own story to tell. But what exactly makes these ingredients so special?

One secret lies in the mountains themselves. Northern Thailand’s cooler climate allows for the cultivation of herbs and vegetables seldom found anywhere else in Thailand. During the monsoon season, the earth yields an abundance of tender, lush greens. These seasonal treasures might grace your plate, adding a delightful textural contrast to stir-fries and soups. As summer’s warmth arrives, the menu might shift towards vibrant blooms, their heady fragrance adding a touch of magic to salads and curries.
